A bit of yuzu-kosho paste can add a lovely kick of heat and extra yuzu citrusy flavor.


Where to Find It

You can find yuzu-miso at many Asian or Japanese grocery stores, but did you know Trader Joe’s carries it, too? My friend recently found both yuzu-miso and yuzu-kosho paste at Trader Joe’s. It’s a convenient option for those looking to explore Japanese flavors without a special trip to an Asian market.

Grilled Cod with Yuzu-Miso

This simple recipe is a great way to start using yuzu-miso. It’s quick, easy, and full of flavor!

Ingredients

  • 2 cod fillets (or try it with salmon or chicken!)

  • 3 tablespoons yuzu-miso

  • 1 tablespoon olive oil or sesame oil

  • Lemon wedges (optional, for serving)

Instructions

  1. Prepare the Cod: Preheat your toaster oven. Place the cod fillets on a baking sheet lined with aluminum foil.

  2. Mix the Glaze: In a small bowl, mix the yuzu-miso and olive oil.

  3. First Bake: Brush half of the yuzu-miso mixture onto the cod fillets. Bake until the fish is lightly browned, about 6 minutes.

  4. Second Bake: Remove the cod from the oven, turn the fillets over, and brush with the remaining yuzu-miso mixture. Bake for another 5 minutes, or until the cod is cooked through.

  5. Serve: Serve with lemon wedges for an extra citrus kick.

Ingredients

  • 1 block of firm tofu, cut into bite-sized pieces

  • 3 tablespoons yuzu-miso

  • Chopped green onions or finely sliced Shiso leaves (for garnish)

Instructions

  1. Prepare the Tofu: Place the tofu pieces on a heatproof plate and microwave for 1 minute to remove excess moisture. Drain any liquid.

  2. Top with Yuzu-Miso: Place the tofu on aluminum foil and top with yuzu-miso paste.

  3. Bake: Bake in the toaster oven for about 5 minutes until the surface is browned.

  4. Serve: Transfer to a bowl and optionally skewer for easy handling. Garnish with either chopped green onions or finely sliced shiso leaves.


Tip: Miso can burn easily, so watch the tofu closely. A little charring, however, adds a delightful smoky flavor. Embrace those crispy edges—they’re delicious!

Yuzu-Miso Dressing (Vegetarian/Vegan Option)

Ingredients

  • 1 tablespoon yuzu-miso

  • 1 tablespoon unsweetened yogurt (regular or plant-based)

  • 1 tablespoon extra virgin olive oil

  • 1 tablespoon fresh lemon juice

  • A pinch of black pepper

  • Salt to taste

Instructions

  1. Combine Ingredients: Mix yuzu-miso, yogurt (either regular or your choice of plant-based), olive oil, and lemon juice in a bowl using a small whisk.

  2. Season: Add black pepper and a pinch of salt to taste.

  3. Serve: Drizzle over your favorite salad or steamed vegetables for a refreshing and tangy twist.

Sautéed Eggplant and Green Pepper with Yuzu-Miso (Vegetarian/Vegan)

This dish combines the natural sweetness of yuzu-miso with the rich flavors of sautéed vegetables. For a bit spicy twist, swap bell peppers with shishito peppers (or use both!) - SUMMER VEGGIES POWERHOUSE!!

Ingredients (for 2 persons)

  • 1 eggplant

  • 1 bell pepper (or try shishito peppers for a spicy kick)

  • Salt and pepper to taste

  • Yuzu-miso

Instructions

  1. Prepare the Vegetables: Cut the eggplant in half lengthwise, and the bell pepper (or shishito peppers) into thin strips.

  2. Sauté the Vegetables: In a pan with a little oil, sauté the eggplant until soft. Add the bell pepper (or shishito peppers) and continue to sauté.

  3. Add the Yuzu-Miso: Add yuzu-miso, known for its sweet more than savory profile, and sauté over high heat, tossing to remove all moisture. Season with salt and pepper to taste.


Tip: If you prefer a less sweet flavor, adjust by adding a bit more salt or a dash of soy sauce. Shishito peppers offer a nice spicy contrast to the yuzu-miso’s sweetness.

  • 50g warm white rice

  • A pinch of salt

  • 1 teaspoon yuzu-miso

  • A pinch of sesame seeds

  • 1 teaspoon salad oil or sesame oil

Instructions

  1. Form the Rice Ball: Mix rice with salt and shape it into a ball.

  2. Prepare for Baking: Spread a thin layer of salad oil on aluminum foil, place the rice ball on it, spread yuzu-miso on top, and sprinkle with sesame seeds.

  3. Bake: Bake in a toaster oven for 3 minutes until the rice ball is lightly toasted.
